CHEF Alex Napolitano
Executive Chef Alex Napolitano has a long history of cooking Italian cuisine. Graduating from The French Culinary Institute’s Italian Culinary Program, attending classes at ALMA in Italy, and working at Michelin star restaurants such as Vicola Santa Lucia, in Cattolica, Italy and later in New York City at A Voce- Madison and Charlie Bird. Most recently, he lead the Rubirosa team in New York City as Executive Chef before joining Scribner’s Catskill Lodge as Executive Chef of the on-property restaurant, Prospect.
Chef Alex believes quality local ingredients can inform and shape the menu, especially in the Hudson Valley where there is an abundance of purveyors and farms to source from. The focus of locally sourced ingredients at Prospect includes farms such as Highland Hollow, Miracle Springs Farm, Yellow Bell Farm and Common Hands Farm. Scribner’s new addition of a vegetable garden, aptly named Old Man Scribner’s Garden, provides fresh produce and microgreens for the various seasonal dishes during the spring, summer and autumn. Prospect offers a fresh approach to upstate retreating, the restaurant presents picturesque 270-degree views of the surrounding Catskill mountains, for morning-to-evening drinking and dining.
